Food Safety Internal Audit Checklist — A food safety internal audit tests whether policies, practices and records actually align. It is most useful when an auditor samples live work rather than checking whether documents merely exist.

Why it matters: A focused audit reveals weak controls before a customer complaint or external assessment. It should consider the facility's risks and applicable scheme.

Step 1 — Understand the process: Define the audit scope: receiving, storage, processing, sanitation, traceability, training and management actions.

Step 2 — Apply the right control: Follow a real product or batch through observations, interviews and objective evidence, and record the exact requirement behind each finding.

Step 3 — Review and improve: Agree corrective actions with owners and deadlines, then verify effectiveness rather than closing issues solely when a form is signed.

Worked example: During a cold-room audit, a temperature record appears complete, but staff cannot explain the alarm escalation. Compare the documented response with actual shift practice.

Mistakes to avoid: Auditing only the office, marking nonconformities without evidence, or allowing people to audit their own work without addressing impartiality. The lesson is to examine how the system behaves during real operations, not only how it appears in a policy document.

Evidence and records: Audit plan, checklist, sampled evidence, nonconformity statements, root-cause actions and effectiveness checks. Records should be legible, contemporaneous and retrievable for the defined retention period.

Practical next step: Use one recent complaint as the starting point for a process-based audit trail. Discuss the results with the people doing the work and turn gaps into assigned, measurable improvements.
